Summary: Food contamination by food pathogens and food spoilage bacteria is a serious problem for human health; however, controlling of these bacteria might be done by using natural antimicrobial products. Our presentation will discuss the potency of some these products in inhibiting pathogenic microorganisms in various foods.

Belinda Elysee-Collen, P.Eng, B.A.Sc, M.Sc., CFS
Our guest speaker Belinda has a B.A.Sc. Chem Eng from the University of Waterloo, and a M.Sc. Food Science from the University of Guelph. She is licensed as a P.Eng with PEO and is a CFS (Certified Food Scientist). She started her career working in Alberta in the oil industry. She has over 20 years experience in the food industry, at small and large companies such as Cargill, and International Sugars. She is currently Canadian Sales Manager of the Ingredients division with Dempsey Corporation, a specialty food ingredients distributor in Toronto.
Belinda is a Past President of CIFST (2013-2014) and was a CIFST volunteer for 18 years. She was part of the steering committee for the 2014 IUFoST World Congress of Food Science and Technology, which attracted 2000 attendees to Montreal. Belinda also volunteers with the Girl Guides of Canada as a Pathfinder and Trex leader, leading adventurous activities for girls from 12-17 years of age.
Adeelah Saad, BBA
Adeelah has a BBA (Marketing & Management Information Systems Concentration) from Beedie School of Business and Minor in Health Sciences from Simon Fraser University. She started her career in the tech industry and soon transitioned into the oil commodity field as a Marketing Executive playing an integral role in setting up the bulk commodity division for Natu’oil Services in North America, planning educational seminars on sustainable palm oil, and working with customers across Canada. She is currently the Account Manager for Western Canada’s Ingredients division and Personal Care division at Dempsey Corporation.
Adeelah is current Marketing & Advertising Committee Chair for BCFT and has been a volunteer with CIFST for 5 years. Her food industry involvement includes Marketing Committee Member with Western Candy Conference (WCC) 2017, Marketing Chair with 2016 CIFST Conference Committee and Sponsorship Coordinator with CAOCS conference. Adeelah enjoys learning about new cultures, has lived in 3 countries, and has traveled to 5 continents so far. Her next exciting travel trip is to Ireland in April 2019.
Cheryl Sullivan, Packaging Consultant
Cheryl is a self-employed Vancouver based business consultant specializing in the field of packaging. She brings over 35 years of industry experience which spans graphic design sales, flexible packaging, paperboard folding cartons and corrugated products. Cheryl offers consulting and coaching, founded PackYourProduct.com, is Chair of the PAC Pacific Region Leadership Council and is a GFSI food safety consultant for IFS PACsecure and IFS Logistics standards.
Cheryl also works with European IFS International Featured Standards to assist with their marketing efforts in North America. The objective is to increase awareness of IFS and their standards, particularly the packaging standard. IFS PACsecure is a GFSI packaging standard that was developed by PAC Packaging Consortium (pac.ca) in Canada. PAC has partnered with IFS to bring the standard up to GFSI requirements and to manage it going forward.
Siham Benribague, Microbiologist
Mrs. Siham Benribague is a microbiologist, with about 10 years of experience in research centers and universities. She completed a Master degree in applied microbiology specialized in food biotechnology. Many of her research interests focused on the field of food protection. Some of her projects were to identify bacteriocins isolated from cheese, and study their bactericidal activities against Listeria monocytogenes and other pathogens. She also studied the activity of natural antimicrobials against E. Coli in beef sausage through a challenge test. Her field of expertise ranges from classical microbiology, to molecular biology, biochemistry and genetics.
